Chatting With Neal Fraser About His Culinary Vision For The Greek Theatre

Neal Fraser of Redbird, Vibiana and Fritzi Coop recently found, in his own words, “an amazing opportunity to work with an iconic L.A. venue with very cool shows.” The revered chef has joined The Greek Theatre in a culinary venture that will see him lending his expertise to the venue’s food and catering services for its 2019 season, which includes tour stops by Billie Eilish, Kacey Musgraves and Steve Miller Band. Here, Fraser shares what he’s been cooking up for the historic theater.

What kind of fare can the theater’s visitors expect from you? The menu will include some Redbird staples like the barbecue tofu and the avocado salad, along with some dishes created specifically for the dining experience at the Greek, like fried chicken thigh and a braised beef short rib. The Greek Theatre Platter is a nod to Japan with tuna rolls, shishito peppers, chile-marinated cucumbers and soy beans.

In your vast catering experience, have you noticed changes in event dining? I think people are now expecting good food options wherever they are to go hand in hand with the level of experience.

As a native Angeleno, what are some of your favorite local restaurants? I like to mix it up. A couple of my favorite L.A. haunts are Musso & Frank, Henry’s Tacos, Joy in Highland Park and Larry’s Chili Dog. Sushi Gen is a favorite for sushi.

As we’re in the midst of summer, do you have any seasonal ingredients or meals you’re excited to use or prepare? I love a good spit-roasted chicken brined overnight in salt and sugar, with some simple grilled vegetables and a nice bottle of pinot noir. [It’s the] perfect summer meal.

You’ve been featured on quite a few cooking shows. Can we expect to see you on our screens again anytime soon? I’ve shot three sizzles for upcoming shows recently and hope one makes it to the small screen. Look out for Danger Chef!
